Brussels Sprout and Pomegranate Salad

Ingredients

  • 1/4 cup of extra virgin olive oil
  • 2 tablespoons of apple cider vinegar
  • 2 teaspoons of maple sugar
  • 1 tablespoon of poppy seeds
  • 1/2 teaspoon of salt
  • 1 pound of brussels sprouts shredded
  • pomegranate arils from 1 pomegranate
  • 4 oz of feta cheese crumbled

Instructions

  1. Whisk the first five ingredients together until emulsified.
  2. Toss together with sprouts, arils and cheese.
