Apple and Cheddar Grilled Cheese

Ingredients

  • 4 slices of sourdough bread
  • 2 tablespoons of butter at room temperature
  • 1 large Honeycrisp apple or another cooking apple, thinly sliced
  • 1 teaspoon of fresh thyme leaves
  • 1 tablespoon of honey
  • 1 cup of grated sharp cheddar cheese

Instructions

  1. Melt one tablespoon of butter in a large pan over medium heat.
  2. Add in the apple slices, honey and thyme. Cook until golden brown and caramelized. Set aside to cool.
  3. Butter one side of each of the four slices of bread.
  4. Heat a cast iron skillet or grill pan over medium heat.
  5. Put two slices of bread butter side down in the pan, layer a fourth of the shredded cheese on each slice, add half the apple to each and top with another fourth of the cheese and the other slice of bread, butter side out.
  6. Cook until the buttered side down is golden and crispy and carefully turn over the sandwich and the other side come to a golden brown. Watch carefully to not let it burn!
