When I lived in Richmond, Virginia I frequented a bar just a few blocks from my apartment where my roommate and best friend worked. I spent many nights there with friends having drinks and listening to live music. I was really sad to hear it left its old space while I was overseas and moved to a new location. I visited the new version of it but sadly it just wasn’t the same. One of my favorite ideas on the menu was something called a Veggie Whip. It was the vegetarian version of the Whip McCord, which featured a potato pancake with sauerkraut and different kinds of meat. The Veggie Whip featured diced vegetables and sometimes it could be a bit hit or miss but I loved the concept.

1. Packing lunch for work doesn’t have to be boring. Look at this little taco salad kit I had for lunch one day! Everything is packed separately for me to toss together for a quick and easy lunch. I think next time I will try to use less plastic baggies to decrease waste.

Happy Friday- Life’s a Beach!

While you read this I will either be on my way to the beach or at the beach (I hope at the beach since I’m leaving at 7am to beat the DC area traffic). I haven’t had an American beach vacation in a few years and I haven’t had a “beach week” since graduating high school (wait, was the really almost 11 years ago?).

I usually made it to the beach at least twice a summer when I lived in Korea, but it’s a completely different beach culture there. First, if you go to one of the popular beaches such as Haeundae in Busan, good luck even seeing the sand as it is completely full of people during the peak season. Despite the crowds, I’d have to say it was always fun to see Korea’s second city and I always had a great time there. The seafood was so fresh and delicious (many people opt for the still-moving octopus you can get chopped right out of the fish tank), with many fish markets and seafood restaurants, and it’s actually there that I had my first kimchi stew with tuna, beachside.

My best friend’s sister is getting married next month, and we’re driving up to Delaware tomorrow to our rented beach house to celebrate. It’ll be ten ladies in one house, so it should be interesting (I hope for more than one bathroom…). Games and surprises have been planned by her bridesmaids, family meals discussed over phone, driving arrangements made- all that is left to get ourselves there. I hope that everyone has a fun and relaxing labor day weekend- celebrate summer while it lasts!

Steamed eggs, Korean style

One of my favorite side dishes to order at a bar or restaurant in Korea is steamed eggs. Steamed eggs at a bar? Yeah, I know it sounds very odd, but it’s a common side dish you can order for a couple of bucks. I love this dish with its light, custard-like texture and savory flavor. Many times it has minced vegetables inside, mostly carrots and scallions, or it can be plain with a scallion garnish on top.

Bison Empanadas

The first cookbook I ever got was from the library of Mrs. Garabelli, my best friend Victoria’s mom. Some of the first dishes I attempted to make came out of that cookbook, and it kind of sparked my love of learning about food and developing recipes. In high school, I would often stop by the Garabelli house where one could always find some sort of delicious meal cooking on the stove. I learned a lot about Uruguayan cuisine from eating with the Garabellis, and some recipes and techniques from a great teacher (Mrs. Garabelli was even on a cooking show back in Uruguay!).
