Bourbon Maple Cardamom Cranberry Compote

This recipe will make about a cup of cranberry compote- enough to serve about six to eight people alongside cheese and bread as an appetizer. You can easily double or triple the recipe for a large dinner party and it can be made ahead and kept in the refrigerator for about a week.

Ingredients

  • 2 cups of fresh or frozen cranberries
  • 1/2 cup of maple syrup
  • 1/4 cup of bourbon
  • 4 cardamom pods
  • pinch of salt

Instructions

  1. Put all the ingredients in a small pot. Bring to a boil over high heat and then turn down the heat to a simmer.
  2. Simmer for 10-12 minutes, until most of the cranberries have burst and the liquid has reduced.
  3. Take off the heat and let it cool for 10 minutes. It will thicken as it sits.
  4. Serve alongside a turkey meal or on top of cheese and bread.
